Food Safety Training FAQ
Food safety is a scientific discipline describing handling, preparation, and storage of food in ways that prevent foodborne illness. Handling food safely in the kitchen is important to avoid food poisoning. The risks include cross contamination between raw and cooked foods, germs from hands and undercooking which fails to kill disease-causing bacteria, viruses or parasites.
Food can become contaminated at any point during slaughtering or harvesting, processing, storage, distribution, transportation and preparation. Food hygiene covers the conditions and measures necessary to ensure the safety of food from production to consumption.
The main responsibilities for all food businesses under the Act are:
1) to ensure that the food you serve or sell is of the nature, substance or quality which consumers would expect
2) to ensure you do not include anything in food, remove anything from food or treat food in any way which means it would be damaging to the health of people eating it
3) to ensure that the food is labelled, advertised and presented in a way that is not false or misleading.
More information can be found in the following PDF - The Food Safety Act 1990: a guide for food businesses

Do courses expire?
There is no expiry date on course credits. Once a credit has been bought it can be allocated at any time. However, should the credit have been allocated to the delegate, each learner then has 12 months to complete the course.
In other words, unallocated course credits have no expiry date. If for example you ordered 1000 licences, and allocated 600 courses in year 1, you would have 400 licences left to allocate in year 2.
